SCAMPI WITH TOMATO & TARRAGON BUTTER

INGREDIENTS

16 x Scampi / Langoustines  - halved lengthways

200g Salted Butter

2 x clove garlic- - crushed

Zest of 2 lemons

1/2 cup French Tarragon roughly chopped 

3 x Tablespoon Olive Oil

20 x Small Ripe Cherry Tomatoes cut into quarters

Extra Tarragon for garnishing.

 

METHOD

Preheat the oven to 200°C.

In a medium non-stick frying pan add 2 tablespoons olive oil and heat over medium, place tomatoes in the pan and cook for 5 minutes. Add the crushed garlic and cook for another 2 minutes. Add the butter, the tarragon and the lemon zest and cook over a gentle heat for 2 - 3 minutes until the butter is melted and the ingredients well combined.

Lay the scampi, cut-side up in a roasting dish and drizzle liberally with the tomato & tarragon butter. Roast for 8 minutes or until the scampi are cooked through.

 

To Serve:

Place Scampi on a platter and garnish with the extra tarragon leaves and drizzle with the pan juices. Serve a ramekin of the butter on the platter for dipping!

 

Notes:

If you can’t find scampi or langoustines then tiger prawns are a good alternative - just extend the roasting time to 15 minutes approx.

 The tomato tarragon butter is also delicious with scallops and salmon!

Quick and easy to make. An impressive lux entree. Serve with a green salad and fresh linguine tossed through the tomato & tarragon butter as a main course.
